These cookies remind of when I was little. My mom used to bake them for me very often.
I have recently rediscovered this recipe and happy to share it.
Fast and easy to make here is what you'll nerd to make them!
Ingredients:
Cottage Cheese - 250 g
Butter - 100 g
Baking Powder - 10g
Pinch of salt
Flour - 250 g
Sugar for decoration
Directions:
All ingredients at room temperature.
Preheat the oven to 190C (375F, gas mark 5) and lay your baking sheet with parchment paper.
1.In a bowl grind cottage cheese until smooth and mix with soft butter;
2.Sift in flour and baking powder and knead thoroughly until doesn't stick to your hands;
3.Let set in the fridge for 20-30 minutes;
4.Stand dough on the table and cut rounds with a regular water glass. Stand-Cut. Repeat until the dough is finished.
5.Pour sugar to a plate big enough to contain previously cut rounds.
6.Dip one side in sugar fold in half (sugar in). Repeat twice until you have a quarter-circle covered with sugar on one side.
7.Fill baking sheet with cookies (sugar covered side on top) leaving some space in-between. 6. Bake in preheated oven for 25-30 minutes until golden.
Cool down.
